   This looks delicious! I’m not sure where to find galangal, can I replace it with ginger?

     Thank you, Pamela! Ginger and Galangal are very different. I
     buy galangal from my local Thai store. If you can’t find fresh galangal, you might be able to find galangal paste at most supermarkets.
